
Mini versions of anything are fun, and Mini Banh Mi are no exception! Banh Mi is the vietnamese word for bread, and also refers to the popular street food of a baguette that has been split lengthways and filled with delicious savoury ingredients. And our favourite part is the pickled carrot. Right?
This recipe is our take on the this traditional vietnamese street food, but the possibilities are endless. Our friend Nagi over at Recipe Tin Eats also has some great suggestions on Banh Mi combos, but the ALL feature pickled carrots. And the best bit is when you use our carrot shred, the hard work is done for you, and you’ll look like a complete pro chef.
Our mini banh mi recipe below uses ham, but if you’re not a fan, just substitute the protein of your choice.
And our big tip is to keep some pickled carrot in the fridge at all times, the possibilities of how to use it are endless. On cheese boards, in salads, rice paper rolls, poke bowls, straight out of the jar…you catch our drift?

Mini Banh Mi with quick pickled carrots
Ingredients
- 1 portion Just Veg. Carrot Shred Quick Pickle
- 12 mini dinner rolls halved
- 12 slices ham
- Cucumber
- Coriander
- Spring onion
- Pate optional, traditional way to make
- Mayonnaise
Instructions
- Spread pate and mayonnaise on one side each of bread roll.
- Fill with ham slice, cucumber, spring onion, coriander and a generous amount of Just Veg. Carrot Shred Quick Pickle.
- Serve.
