
Belinda's Chicken Zoodle Thai Curry (GF)

A tasty thai red curry that has added vegetable goodness with zucchini noodles (zoodles)

Ingredients
- 1 tbsp Coconut oil
- 1 Chicken breast fillet diced
- 1 tbsp Thai red curry paste
- 1 tin Coconut cream
- Zucchini noodles
- 1/2 Onion
- 1 1/2 cups Just Veg carrot shred
- Cumin
- Fish sauce
Instructions
- In frying pan, cook diced chicken and onions in coconut oil.
- Add tin of coconut cream and a good tbsp of thai red curry paste add to suit taste.
- Add a splash of fish sauce and a sprinkle of cumin. Bring to slow boil.
- Add carrot & zoodles
- Simmer and stir approx 10 mins.
- Garnish with coriander (optional)
- Serve immediately

I'm trying to add more vegetables to my diet, I was given a spiraliser , it has enabled me to make recipes with zoodles!
