Belinda's Chicken Zoodle Thai Curry (GF)

A tasty thai red curry that has added vegetable goodness with zucchini noodles (zoodles)



  • 1 tbsp Coconut oil
  • 1 Chicken breast fillet diced
  • 1 tbsp Thai red curry paste
  • 1 tin Coconut cream
  • Zucchini noodles
  • 1/2 Onion
  • 1 1/2 cups Just Veg carrot shred
  • Cumin
  • Fish sauce


  1. In frying pan, cook diced chicken and onions in coconut oil.

  2. Add tin of coconut cream and a good tbsp of thai red curry paste add to suit taste.

  3. Add a splash of fish sauce and a sprinkle of cumin. Bring to slow boil.

  4. Add carrot & zoodles

  5. Simmer and stir approx 10 mins.
  6. Garnish with coriander (optional)

  7. Serve immediately

I'm trying to add more vegetables to my diet, I was given a spiraliser , it has enabled me to make recipes with zoodles!
