
Moroccan Carrot Salad
Wow your friends when you turn up with this impressive (but super easy) carrot salad, inspired by the flavours of Morocco. This salad is also a great addition to your burger, wrap or sandwich. Ingredients
- 1 400 g can drained and rinsed chickpeas
- 1/2 pkt Just Veg. Carrot Shred
- 2 tbs sultanas
- 1 tbs sumac
- 1/4 tsp sea salt
- 1/4 red onion finely diced
- 1/4 cup mint finely sliced
- 2 tbs honey
- 2 tbs tahini
- 2 tbs extra virgin olive oil
- 2 tbs water
Instructions
- Place carrot shred, chickpeas, sultanas, sumac, onion, and mint into a bowl and combine well.
- In another small bowl, place all remaining ingredients and combine well to make the dressing.
- Dress the salad and enjoy.
