
Tracey's Just Veg. Carrot Soup
Just Veg. team member, Tracey Rieck, is married to carrot farmer Michael. Like most farming wives, Tracey has developed a broad repertoire of recipes which feature the produce grown on farm. This is her beautiful Carrot Soup recipe, featuring our Just Veg. Carrot Sticks.

Ingredients
- 300 g bag of Just Veg. Carrot Sticks
- 1 large potato
- 30 g butter
- 1 large onion
- 1 clove garlic
- 1/2 tsp curry powder
- 1/2 tsp cumin
- 4 cups stock
- Salt & Pepper to taste
Instructions
- Melt the butter and add the Just Veg. Carrot Sticks and other vegetables. Stir over low heat until soft.
- Add seasoning and pour in stock.
- Simmer until cooked.
- Puree. Add more water to achieve desired consistency.
