
Rachel's Turkey & Veg Sausage Rolls

Ingredients
- 500 grams turkey mince
- 200 grams Just Veg shredded carrots
- 100 grams grated zucchini
- 1 onion finely chopped
- 2 eggs
- 50 grams crushed weet bix
- pinch salt
- pinch black pepper
- chopped parsley
- 3 sheets of reduced fat puff pastry thawed and cut in half
- sesame seeds
Instructions
- Simply place all ingredients (except pastry and one egg) into bowl and mix well
- Spoon mixture lengthways along centre of pastry sheet then fold over and roll, so seem side is down
- Continue and place on baking tray lined with baking paper
- Brush with egg wash and sprinkle a few sesame seed
- Cut into bite size pieces and cook in preheated 180c oven for approx 15 to 20 mins until golden
Notes
Traditional Sausage rolls have always been a favourite , so making them healthy for my own family makes them even more so! Delicious!
